Saskatoon Berry
Goat Milk Brulee

Ingredients:
  • 4 egg yolks
  • 3 whole eggs
  • 2 tbsp. brown sugar
  • 4 tbsp. white sugar
  • 2 cups goat milk
  • pinch of salt
  • 1/2 tsp. vanilla
  • 4 tbsp. brown sugar

Fruit Mixture

  • 2 cups saskatoon berries (fresh or frozen)
  • 1 cup sugar
  • 1 tbsp. lemon juice
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground clove
  • 1/4 cup cornstarch
  • 1/4 cup water
Instructions:

Mix, but do not whip the yolks, whole eggs, 2 tbsp. brown sugar and 4 tbsp. white sugar.

Bring the goat's milk to the scalding point and add to the egg mixture, while stirring constantly. Add salt and vanilla. Set aside.

Fruit Mixture

Place all ingredients in a saucepot except the corn starch and water. Bring to boil, mix the water and cornstarch add slowly. Add enough to thicken the berry mixture. Pour about a half inc of the micture into ramekins. Let cool.

Pour egg mixture on top slowlyso they do not mix together!

Place ramekins in a water bath and cook for 30 to 40 min. at 350 F. Let cool and refrigerate for 2 hours.

Sprinkle the rest of the brown sugar on top and caramelize under the broiler. Place on 9 inch plate with a doily; sprinkle with icing sugar and serve.
